Down Under, Better Burgers and a Rock

Well, the countdown is on.  Actually it began a few months ago.  I guess it is just the measurement that has changed.  What started out to be measured in months, then weeks, became days and now hours.  Tyler is headed down under, in the geographical sense.  He is going to Australia to play soccer in the Hyundai A-League.  It is very exciting for Tyler and we are all happy and I get to continue to live vicariously through my children.  Whether it is attending A-List parties, on the cat walk wearing clothing I couldn’t afford (and not usually would want to be seen in…), becoming the toast of the town and flying to NY to demonstrate a new technique that I am passionately dedicated to for work, or traveling internationally to play professional soccer…I live a great life.  Oh wait, through my children, of course. ( I almost fooled myself thinking it was me doing all those things)  So last night we had some family and friends over to celebrate this rare opportunity to see Tyler off .

The FINAL countdown has begun…about 24 hrs before launch of a world of new experiences, ‘mates, g’days and ugh, Vegemite.

So in leading up to this moment we have tried to make the last week or so a special one for Tyler.  We had the party, went out to a restaurant with he, Nina, Rachel and Drew, and made one of Tyler’s favorite dishes for dinner at home.  (another one will be served up tonight for him)  A couple of years ago I found this unusual recipe for a great burger.  It has a little spice to it, but really not that much because of all the great flavors and textures it offers.  This is from well-known cook book author, cook-off judge and foodie James McNair.  It truly is special and a better burger…than most.  I challenge you to make one and enjoy it….Tyler sure does!

Andouille and Beef Better Burger (makes about 4-6)

  • Spicy Mayo
  1. 3/4 cup mayo
  2. 1 Tblsp fresh lemon juice
  3. 1 tsp Cajun or Creole seasoning
  4. 1/4 tsp hot sauce (Tabasco or Franks is always good)
  • Burgers
  1. 1/2 lb andouille sausage cut into small cubes or quarters
  2. 3/4 cup pecans, toasted and chopped (do not chop too fine, “chunks” add to the texture)
  3. salt and pepper to taste ( I actually like to take peppercorns and use my mortar and pestle for some fresh pepper)
  4. 1 1/2 ground beef, chuck or sirloin (again, just like tequila…use the good stuff.  you will not be sorry)
  • Caramelized Onions
  1. 1 1/2 lbs onions thinly sliced
  2. 2 Tblsp olive oil
  3. 3 garlic cloves minced
  4. 1 Tblsp dark brown sugar
  • Also…Hamburger buns, 8 oz crumbled blue cheese, pickled okra (oh go ahead and try it, it is really good you wuss!), and watercress tops or baby spinach leaves
  • For Mayo: mix all ingredients and chill
  • For Onions: Toss onions and other ingredients in a skillet, cook until golden brown (can do this on the stove or even on the grill)
  • For Burgers: Mix all ingredients in a bowl and create the number of desired patties. Grill until preferred level of done-ness(?).  Right before removing from the grill (1-2 minutes) top with blue cheese crumbles.
  • Some assembly required: Bun bottom, onions, burger, okra, spinach, spread mayo on the cut side of the bun top and you’ve got one helluva better burger there with a Cajun kick…mon cherie!

Okay, so the title or heading of this post is “Down Under (check), Better Burgers (check) and a Rock…(huh? Rock?)

I am reading a book right now, “Searching For God Knows What”, by Donald Miller.  (Thanks Rachel)  And in the book, Miller speaks to a time in the life of Maya Angelou that was a very traumatic one.  After her mother shared some moving words with her, Angelou thought to herself, Suppose I really am somebody?

At President Clinton’s inauguration, she delivered a poem that had the compelling words:

But today, the Rock cries out to us,

clearly, forcefully,

Come, you may stand upon my

Back and face your distant destiny!

Hmmmm? So how does this tie in?

Well to Tyler, and Blake, Drew and Diana…I say… You are somebody.  Be that body, that person, that special being that is here at this point in time and has wonderful opportunities to take advantage of and experience.  And while you are recognizing this, preparing yourself and others for it and begin the journey…

I will be that Rock for you.  Stand on my back if you need help and face your destiny, your opportunities, your future and adventures.  It won’t be easy for any of us, but nothing worthwhile ever is…

This is our life here, embrace it, enjoy others and have a better burger (and try the okra damn it!)  Until the next post, remember, You are somebody.
